Vegan Butter Bean Stew

Directions
Prepare the beans by adding them to a pot filled with enough water to cover the beans and a bit more. Bring the pot to a boil and leave it on high heat for 5 minutes. Turn off the heat and leave them soaking in the pot for 5-8 hours.
After soaking, add the beans to a sieve and rinse with water. Add them to a pot filled with water and simmer on medium heat, covered, till they become tender. Once tender, remove them from the pot and let cool.
Finely chop the onions and coriander and set aside. Crush garlic cloves with a garlic crusher and set aside.
Bring a pot to medium-high heat and add oil. Add onions with salt and pepper and stir frequently until they turn pink in color. Add garlic and stir for 1 minute until they turn fragrant.
Add chopped tomatoes, tomato paste, tomato juice, sugar, soy sauce, and water. ***
Add beans and bring to a boil. Adjust any flavor per taste. Simmer on low heat for 10-15 minutes or until the beans are tender.
Add coriander.
Best served with rice. Stir and enjoy!
Ingredients
2 cups dry butter beans or 2 cans butter beans (400 g each)*
2 tablespoons olive oil (or oil of choice)
2 medium onions, finely chopped
3 garlic cloves, crushed
½ cup coriander, finely chopped
2 tablespoons soy sauce
1 pack tomato juice (500 g)
1 tablespoon tomato paste
1 can chopped tomatoes (200 g)**
½ teaspoon sugar
2-3 cups water
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon sweet pepper
½ teaspoon chili flakes (optional)

*If using canned beans skip the 1st and 2nd step.
**If you don’t have a can of chopped tomatoes, you can add 2 fresh tomatoes that are finely chopped.
***If you don’t like a lot of sauce, reduce the amount of water and tomato juice.
