Directions
Remove the ends of the Italian green beans and chop them into bite-sized pieces. Rinse and dry them very well with a kitchen table cloth to avoid splashing in the pan. To a large pot on medium heat, add vegetable oil and fry the green beans in two batches and set aside.*
To the same pot (optional) on high heat add olive oil and onions with salt and pepper. Stir for 5-10 minutes till they turn pink and soft.
Add garlic cloves and stir for 2 minutes till fragrant.
Add carrots and stir till they become soft.
Add tomatoes, tomato paste, sugar, and green beans.
Add water, bring to a boil, and let simmer for around 30 minutes on low heat, stirring occasionally.
Turn off the heat, add a splash of olive oil and stir.
Best served with rice. Stir and sa7ten!

1 kg Italian green beans
¼ cup vegetable oil
2 tablespoons olive oil (or oil of choice)
2 medium sized onions, finely chopped
5 garlic cloves, roughly chopped
2 medium sized carrots chopped into circles or semi-circles
1 can chopped tomatoes (200 g) or 4 medium sized tomatoes
1 tablespoon tomato paste
1 teaspoon sugar
½ cup water
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon sweet pepper
½ teaspoon chili flakes (optional)
