Directions

  1. Remove the ends of the Italian green beans and chop them into bite-sized pieces. Rinse and dry them very well with a kitchen table cloth to avoid splashing in the pan. To a large pot on medium heat, add vegetable oil and fry the green beans in two batches and set aside.*

  2. To the same pot (optional) on high heat add olive oil and onions with salt and pepper. Stir for 5-10 minutes till they turn pink and soft.

  3. Add garlic cloves and stir for 2 minutes till fragrant.

  4. Add carrots and stir till they become soft.

  5. Add tomatoes, tomato paste, sugar, and green beans.

  6. Add water, bring to a boil, and let simmer for around 30 minutes on low heat, stirring occasionally.

  7. Turn off the heat, add a splash of olive oil and stir.

  8. Best served with rice. Stir and sa7ten!

  • 1 kg Italian green beans

  • ¼ cup vegetable oil

  • 2 tablespoons olive oil (or oil of choice)

  • 2 medium sized onions, finely chopped

  • 5 garlic cloves, roughly chopped

  • 2 medium sized carrots chopped into circles or semi-circles

  • 1 can chopped tomatoes (200 g) or 4 medium sized tomatoes

  • 1 tablespoon tomato paste

  • 1 teaspoon sugar

  • ½ cup water

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • ¼ teaspoon sweet pepper

  • ½ teaspoon chili flakes (optional)
